The U.S. Fire Administration and NFPA both point to grills as a leading cause of outdoor structure and patio fires each year, and grease buildup is the common thread in most of them. The good news: it's one of the most preventable fire risks in your backyard.

What causes flare-ups

A normal, brief flare-up from dripping fat is expected and harmless. A dangerous flare-up happens when accumulated grease — in the tray, on heat shields, or pooled in the firebox — ignites all at once rather than burning off gradually. That's a grease fire, not a cooking flare-up, and it can burn hot enough to damage the grill or spread to nearby structures.

The maintenance that prevents it

  • Empty the grease tray regularly — not just when it's overflowing. A tray more than half full is past the point where you want to keep using it.
  • Degrease heat shields and flavorizer bars during deep cleans — they catch drippings before the tray does and accumulate grease just as fast.
  • Clean the firebox floor where grease can pool beneath the burners, out of sight.
  • Check grease drain tubes on pellet grills and smokers for clogs — a backed-up drain is one of the more common causes of hidden fires.

Other safety basics

  • Keep the grill at least 10 feet from siding, railings, and overhangs.
  • Never move a lit grill, and never grill in an enclosed space like a garage.
  • Check gas hoses and connections for cracks or leaks each season — a soapy water test on connections shows bubbling if there's a leak.
  • Keep a fire extinguisher rated for grease fires (Class B or K) within reach.
If a grease fire starts: turn off the gas supply if it's safe to reach, close the lid to cut off oxygen, and use a Class B/K extinguisher or baking soda. Never use water on a grease fire — it spreads burning grease rather than putting it out.

The honest bottom line

Almost every serious grill fire we've heard about traces back to a grill that hadn't been cleaned in a long time. A grease tray emptied regularly and a deep clean once or twice a season eliminates the underlying cause for the vast majority of flare-up incidents.
